Summery Foods

Some nice, strong kalamata olives...
... to make some tasty ptitim!
2 packages of ptitim, otherwise known as Israeli couscous
a pint of kalamata olives, halved
one package of feta cheese, cubed
one package grape tomatoes, halved
sea salt, fresh ground pepper, and olive oil to taste

Cook the "couscous" according to the package directions. I usually toast it in a bit of olive oil in the pot for a minute before adding the water, and then I often have to add more water as it cooks b/c it soaks it up really fast.  When it's done, toss it with remaining ingredients, and a healthy dose of salt, pepper, and oil.
Serve with hummus and pita, and voila!  You have a light, vegetarian summer meal--and leftovers for days!
